Box 1: Score Card

Our first week incorporating Box 1 into our meals went pretty well. We’ve got the motivation right now and since it’s something new after who-knows-how-many-weeks we’ve been self quarantining, it’s probably more exciting to us than it will be in the near future. Spring rolls and smoky black-eyed peas really elevated our meals.

The Experience

We’re off to a great start, we used everything in the first box!

We tackled the mustard greens early in the week. We were not sure how long they would stay fresh, and we were not too enthusiastic about eating them since some early bites of the raw leaf tasted spicy and bitter. Cooked down and incorporated into some smoky black-eyed peas from Thug Kitchen created a delicious harmony of flavors. We’d eat this again if more mustard greens show up in the future boxes.

We tried the Yellow Split Pea and Green Onion Lettuce Wraps as written in Thug Kitchen, but it was difficult to eat keeping all the veggie fixings in the wraps. We had the idea to riff a bit and wrap the whole thing in a rice wrap turning this into spring rolls! The first few we didn’t wrap tightly enough and eating them created messy explosions of yellow peas. But their deliciousness absolutely outweighed the giant dinner time mess. There’s a quick review of our procedure for creating these delicious, hand held, dip-able packs of explosive flavor below.

The only recipe we probably won’t make again is the Sauteed Asparagus and Snap Peas recipe. One of us prefers our snap peas raw, dipped in hummus, rather than cooked.

Yellow Pea Spring Rolls

We got a pack of rice wraps from the grocery store, typically found in the Asian food section. To make spring rolls we hold the rice wrap, just getting it damp on both sides, under the kitchen faucet for a few seconds and lay in on a plate. We put about 1 ripped up lettuce leaf in the middle, and then added 2 heaping tablespoons of the split pea mixture, following the recipe in Thug Kitchen. Then we folded all the sides over the mixture, making sure to overlap the edges of the rice wraps, so that you end up with something that looks like a spring roll! We messed this up on the first few tries, so the key here is to just have fun and keep your expectations low.

The Score

First week down and we did keep to our plan! We ate 100% of our box and really enjoyed the spring rolls. Even the red mustard greens mixed up with the black bean recipe was surprising delicious.
