Box 5: Shades of Orange

The season for cucumbers and summer squash is in full swing. We received two varieties of cucumbers and a quart of yellow squash. Tree fruit is ripening with the arrival of fresh, ripe peaches! And our big decision this week is whether to eat the peaches raw or put them in a dish.

The Prepping

First things first, we needed to wash, dry and properly store the veggies, to get it to last all week.

We rinsed off the various cucumbers, yellow squash, and peaches, so that they’re all meal ready. We’ll rinse the blueberries when they’re about to be eaten, and we stuck the head of basil in a jar of water to help keep it fresh.

The lettuce will get its usual treatment. We immediately rinsed and separated the lettuce into small batches. Each batch we put into the salad spinner, and spun to help dry. Once all batches had had their turn, we dried out the salad spinner, put all the lettuce back into the spinner, secured the top and placed in the fridge for storage. We are starting to wonder just how long into the summer lettuce can grow!

The Planning

We love pickles, so the pickling cucumbers will be be turned into their namesake pickles again this week. Also, we plan to turn the bouquet of fresh basil into more yummy pesto, following this Basic Pesto recipe.

The peaches arrived very fresh. And there are six of them, my guess is that we’ll eat them all in the next two days. Similarly, we plan to eat the blueberries fresh this week, plain or in smoothies.

The Lettuce Train Continues

We’ll plan on some healthy salad lunches or snacks this week featuring the lettuce and cucumbers. While our garden is also producing slicing cucumbers we’re curious to see how these compare.

Yellow Squash

The green zucchini has given way to yellow summer squash. We love to eat yellow squash when its grilled, so there will be grilling! Given the amount of squash, we’ll have to come up with some additional uses. Right now we’re wondering if you can put yellow squash on pizza.

Summary

The fresh, ripe peaches are a welcome box item, and they easily won’t last long. We’re happy to have the zucchini transition to yellow squash for a different flavor profile. We’re putting away the zucchini spiralizer and are busting out our cookbooks to see what’s out there for yellow squash!
