Box 5: Score Card

Loads of yellow squash were put to creative use this week. While we had enough for grilling and sauteing, but our favorite use was in some homemade pizza featuring homemade pesto. Local fresh peaches were also exceptional, but we didn’t need to get more creating than just eating them raw!

The Experience

We had to get a little creative this week, finding ways to eat all the yellow squash. We had loads of squash for grilling and slicing and incorporating into other tasty meals. One deliciously successful meal was a yellow squash and pesto pizza. Despite our attempts, we did not eating about half of one yellow squash, so it’s our first week of not hitting 100%. But it’s good to find our limits.

Homemade Yellow Squash Pesto Pizza

To create our homemade pizza, we first whipped up a batch of pizza dough, following this super simple pizza dough recipe from Sugar Spun Run. After we form it into a pizza pie shape and have in laid out on a pizza stone, we get creative.

We spread our homemade pesto sauce on the dough, along with some dollops of tomato sauce. We chopped up 2 cloves of fresh garlic and spread it out over the top of the sauce. We then cut the squash into 1/8 in thick rounds and placed them on the pizza as if they were slices of pepperoni. We then sprinkled about 2 cups of shredded mozzarella on top and put in into a 450deg F oven for about 15 min.

Voila! Summer squash pesto pizza!

Refrigerator Pickles

We also mixed up a new batch of refrigerator pickles, following a slightly different recipe than last week. We love having the ability to get creative when it comes to recipes and wanted to try a less sweet and more garlic forward pickle brine.

We found a less sweet recipe on Pinch Me I’m Eating, which had noticeably less sugar than our previous recipe. We also like how the author walks you through the cost saving of homemade pickles versus store bought. So far, from what we’ve tasted, these are truly delicious pickles!

Home Garden

We are happy to add that our home garden continues to provide some bonus produce. This week we enjoyed 2 additional slicing cucumbers in our salads and sandwiches.

The fifth week went pretty well. We fell a little short finishing all the grilled yellow squash. We grilled up two to go along with some hot dogs, through some as leftovers in the fridge and forgot about them! Then when we found them again, something about reheating grilled squash just never quite appealed. Still we are doing well in using or consuming nearly all the produce in the box.
